Suprême Chocolate Cake with Ganache Empty Suprême Chocolate Cake with Ganache

Here's an absolutely wonderful recipe for a supremely soft & moist chocolate cake....Come on, everyone, start trying out all the wonderful recipes our members are posting & don't forget to comment:)

5 eggs (separated)
1 cup flour
2 tsp baking powder
1 heaped Tblsp cornflour
1 cup castor sugar (it is preferable to put a little less than a cup)
½ cup oil
1 tsp coffee essence (or 1 Tblsp of extra-strong coffee)
½ cup water
3 Tblsp good quality cocoa

Beat egg yolks for a few seconds, add oil & coffee. Do not mix. Add sifted flour, baking powder, cornflour & castor sugar. Beat well.
Boil water (add about an extra 3 Tblsp of water) & cocoa, remove from heat & allow to cool (not completely). Add to flour mixture & beat until well combined.
Beat egg whites until soft peaks form & fold into batter. Pour into a greased & lined 13 × 9 × 2inch cake pan. Bake at 180°c for 30 minutes or until a skewer inserted into the centre comes out clean. Allow to cool. Cut into squares.
Ganache:
¼ cup milk
2 Tblsp oil
100g milk chocolate (half dark & half milk works wonderful)
Combine milk & oil & boil. Add chocolate & stir to make a smooth & thick sauce. Allow to cool slightly. Spread the ganache on each cake. Decorate with 60g melted white chocolate.
